A to Z Bread

Years ago the Contra Costa Times had a yearly recipe contest...A to Z Bread (or snack cake) was the winner one year....the 2 C of fruit required could be ANYTHING from A to Z (B = bananas, C = coconut, D = dates, etc. down to Z = zucchini)
Since I made Crockpot Applesauce yesterday with some of the apples from Aunt Val and Uncle Dick's apple ranch....I used applesauce and crushed pineapple)

Stir together in a large bowl these dry ingredients:

3 C flour
2 C sugar
1 t baking soda
1 t salt
1 T cinnamon
1/2 t baking powder

Beat together in another bowl:

3 eggs
1 C oil
1 T vanilla
2 C A-Z (in this case....1 C applesauce and 1 C crushed pineapple)

Mix into the dry ingredients and pour into a "Pammed" jelly roll pan (10 x 15). Bake at 350 about 25 minutes. While still warm "sift" powdered sugar over the top or make a thin powdered sugar glaze.
