Cranberry Bread

This is just the recipe on the cranberry package, doubled so you use the whole package of cranberries.

4 C flour
2 C sugar
1 T baking powder
2 t salt (or less)
1 t baking soda
1 1/2 C orange juice
4 T oil
2 T grated orange peel
2 eggs
3 C coarsely chopped cranberries (I use a food processor)
1 C chopped nuts

Mix and fill two 9x5 bread pans or 5 or 6 small foil pans. Bake at 350 for about 50 minutes, a little less for the small loaves. Good as is or frosted with powdered sugar glaze or cream cheese frosting.
