Texas Pork Barbecue
(We took this on our Yellowstone trip)
Cook a boneless pork roast (abt. 2 lbs) in the oven or in a crock pot until tender. Slice or pull into pieces.
1/2 C chopped onion
2 cloves garlic, minced
12 oz. bottle chili sauce (I use Del Monte)
2 T each: brown sugar, vinegar, molasses, water
2 t each: lemon juice, yellow mustard
1/2 t liquid smoke
1/4 t each: red pepper, salt
Saute onion and garlic in butter. Add remaining ingredients. Simmer 20 minutes. Add meat and simmer. Serve on toasted buns.
