Girls Camp Recipes....Oven Omelet

Oven Omelet
This made a big foil pan full..enough for 10 or 12 people...cut in half for a smaller group..

Frozen Hash browns (32 oz)

3 T melted butter(optional)

1 qt. "Egg Beaters" or similar product (or real eggs)1 1/2 C milk

1-2 C diced ham, sausage or bacon

shredded cheese - 2 or 3 cups, whatever looks good to you...



Layer half the hash browns, the cheese, meat; Repeat layers; Mix eggs and milk, also a little pepper (the cheese makes it salty enough)..pour over casserole.
Bake at 350 until set.

TexasPork Barbecue

Texas Pork Barbecue
(We took this on our Yellowstone trip)


Cook a boneless pork roast (abt. 2 lbs) in the oven or in a crock pot until tender. Slice or pull into pieces.


Sauce:
1/2 C chopped onion
2 cloves garlic, minced
butter
12 oz. bottle chili sauce (I use Del Monte)
2 T each: brown sugar, vinegar, molasses, water
2 t each: lemon juice, yellow mustard
1/2 t liquid smoke
1/4 t each: red pepper, salt



Saute onion and garlic in butter. Add remaining ingredients. Simmer 20 minutes. Add meat and simmer. Serve on toasted buns.

World's Best Cookies

This was a recipe from long ago (it's in the CV2 Ward Cookbook)..I made it to take on our Yellowstone Trip...I'll have to add a picture later!

*World's Best Cookies
((Actually...WBC Not Containing Chocolate)

1 C butter
1 C white sugar
1 C brown sugar
1 egg
1 C oil
1 c rolled oats
1 C crushed cornflakes
1/2 C coconut
1/2 C walnuts
3 1/2 C flour
1 t soda
1 t salt
1 t vanilla

Cream butter, sugar, egg and oil. Stir in dry ingredients and vanilla. Form balls on ungreased cookie sheets. Flatten with fork dipped in water, then sugar. Bake 12 minutes at 325. Let cool on sheets.

For anyone who grew up in the 50's or 60's this will bring back a lot of memories...for anyone else it gives a great picture of growing up in simpler(and poorer) times...it was hard to see the difficulties caused by the alcoholic father...but inspiring to see how a mom's wonderfully positive attitude pulled her family through hard times...it's amazing the prizes she won "back in the day" when "contesting" was a way of life

Evelyn Ryan's writing wasn't great literature but her life is the essence of "indefatigable."

Sister Beck said, "The ability to qualify for, receive and act on personal revelation is the single most important skill that can be acquired in this life. When we have that spirit we can walk with God and make proper choices, we can know what to do.
