These cupcakes were just an excuse to eat the frosting! Dustin made a birthday cake for Kendra last year and this was the frosting...I've been thinking about it for a year! (There's no powdered sugar in it...but that doesn't mean low sugar!)
Dustin's Chocolate Frosting
2 squares (1 oz each) unsweetened chocolate
1 (14 oz) can sweetened condensed milk
1/2 C water
1/2 t vanilla
1 (3.9) small box instant chocolate pudding
1-2 C whipping cream (I used 2)
Melt the chocolate in the microwave(1 t butter helps it melt smoothly) and cool slightly
Mix melted chocolate with the milk, vanilla and water.
Stir in the dry pudding mix.
Whip the cream and fold into the chocolate mixture.
You can put the frosting in a zip lock bag, cut off a corner and swirl on your cupcakes, or use a pastry bag and #1 star tip like I did....I found these cute white sprinkles at JoAnne's. Refrigerate leftovers.
