Holiday Happiness...Eggnog Bundt Cake (with Caramel Sauce?)

I found this yummy dessert on The Sisters Cafe....she served it with a Caramel Sauce that I plan to make sometime, but I didn't dare make so much yumminess with only three of us to consume it....




Eggnog Bundt Cake

1 yellow cake mix(with pudding in it)
3 T flour
2 eggs
2 C eggnog
1/4 C soft butter
1/4 t rum flavoring
1/8 t nutmeg (or go crazy and add 1/4 t)


Mix well and pour into bundt pan that has been well sprayed with Pam. Bake at 350 for 35-45 minutes. Cool a bit and turn out on a plate. I just glazed this a bit with powdered suger mixed with a little milk and rum flavoring. Next time I'm going to try this:

Caramel Sauce
1/2 lb brown sugar(1 1/8 C)
1/2 lb butter
1/2 lb powdered sugar(2 C)
1/2 T cinnamon
1/2 qt. rich vanilla ice cream(2 C)


Melt everything together and cook briefly. Serve over eggnog cake. Leftovers can be refrigerated and reheated in the microwave.
